Mmmmm….banana bread!

Shane’s Super-Awesome Super Vegan Bananer Bread

(Ok, so this isn’t the real name of the recipe. But we don’t know what the real-real name is, or even where we got it, so “Shane’s Super-Awesome Super Vegan Bananer Bread” will have to suffice. When you’re working off a scrap of paper, them’s the breaks.)

Equipment

8 x 4 bread pan

Ingredients

1/2 cup brown sugar
1/2 cup white sugar
1/2 cup margarine, at room temp
3 very ripe bananas, mashed well
2 cups flour
1/2 teaspoon baking soda
1/4 cup vanilla soy milk, mixed with 1 teaspoon apple cider vinegar
1 teaspoon vanilla
1 teaspoon cinnamon
1/4 teaspoon allspice
1/2 teaspoon salt

Directions

Preheat oven to 350 F. Spray an 8×4 bread pan with non stick cooking spray, or lightly coat with margarine.

Sift together flour, baking soda, salt and spices.

Cream together the margarine and sugars. Add bananas, soy milk and vanilla.

Add the wet ingredients to the dry. Mix well. Pour batter into pan. Bake for 60 to 70 minutes.

Kelly’s Notes

If you don’t have any apple cider vinegar on hand (What!? No apple cider vinegar? What’s wrong with you, vegan!?), you can just add in a dash of extra soy milk.

For a seasonal variation, use Silk Soy Nog or Pumpkin Spice soymilk. We (ok, Shane) used the Pumpkin Spice in this batch, and it is seriously yummy. Not that I like blowing through the rest of my Pumpkin Spice Silk in a recipe, but I have 6 cartons left and they’re all dated 2/15. Use ‘em or lose ‘em! (Hint: It’s also really yummy when mixed half-and-half with water, warmed, and used to make Spicy Chai tea. But I digress.)

Finally, chocolate chips! If you want to make your Super-Awesome Super Vegan Bananer Bread Captain Awesome worthy, add some chocolate chips. At least a half a cup or, in Shane’s words, “Whatever looks good.”
