VeganMoFo, Day 29: Spicy Watermelon Smoothie

Tonight, I wanted to make a drink with all the watermelon chunks I sliced up the other day. I found a recipe for Watermelon Juice from Recipe Zaar and gave it a whirl, with some minor changes. I also changed the name, since “Watermelon Juice” isn’t especially descriptive!

Ingredients

4 cups chopped watermelon, with or without seeds
2 cups ice, crushed or cubed
4 teaspoons agave nectar (you can also substitute sugar if you don’t have any agave nectar on hand)
1/2 to 1 teaspoon black pepper, to taste
fresh mint (optional garnish)

This recipe requires a blender.

Directions

1. Combine the watermelon and 1 cup of ice in a blender and blend until smooth. (If you want to remove the seeds, now’s the time to do it. Shane likes watermelon seeds, and will usually eat them with the fruit, so I left them as-is, and the blender pretty much crushed them to a pulp.)

2. Add agave nectar, 1/2 teaspoon black pepper and 1 more cup ice and blend until smooth.

3. Add additional black pepper to taste. (I thought 1/2 teaspoon – as called for in the original recipe – was more than enough, but the Mr.thought the juice could use a little extra kick, and had me double the pepper.)

4. Garnish with mint as desired (alas! we had none) and serve chilled.

This recipe makes two moderate servings, or one large serving (pictured) with a little extra left over.

Linux-themed stein is geeky, but optional!
