More Vegan Gourmet: Cheesy Baked Potatoes

Baked potatoes. Diced tomatoes. A dash of olive oil and garlic. Smothered in melty, cheddary Vegan Gourmet soy cheese.

Cheesy Baked Potatoes

4 white baking potatoes
14 to 28 oz canned diced tomatoes (or 2 to 3 fresh tomatoes, diced)
Olive oil
Garlic and/or onion powder
Follow Your Heart Vegan Gourmet soy cheese (or similar), cheddar flavor, 1/2 to 1 brick
1 medium sized glass baking pan

2. Peel the potatoes – or, if you prefer, scrub and dry them thoroughly, and leave the skins on – and then slice them into 1/4″ rounds edtime herunterladen.

Note: Some of the cheese – namely, the stuff around the perimeter, touching the sides of the glass pan – burned on me. The Vegan Gourmet brand cheese might melt a little more quickly than I’m accustomed to. If you like your potatoes a on the soft side (mememe!), and plan on baking this dish longer, you may want to add the cheese 15 or 20 minutes in. This could help minimize the burning.
