More Vegan Gourmet: Cheesy Baked Potatoes

Baked potatoes. Diced tomatoes. A dash of olive oil and garlic. Smothered in melty, cheddary Vegan Gourmet soy cheese.

Need I say more?

Cheesy Baked Potatoes

Ingredients

4 white baking potatoes
14 to 28 oz canned diced tomatoes (or 2 to 3 fresh tomatoes, diced)
Olive oil
Garlic and/or onion powder
Follow Your Heart Vegan Gourmet soy cheese (or similar), cheddar flavor, 1/2 to 1 brick
1 medium sized glass baking pan

Directions

1. Preheat the oven to 425 degrees.

2. Peel the potatoes – or, if you prefer, scrub and dry them thoroughly, and leave the skins on – and then slice them into 1/4″ rounds.

3. Dribble a tablespoon of olive oil into your glass pan. Using a potato slice, smooth the oil onto the bottom of the pan, so that it’s evenly greased. (Add more oil as needed)

4. Arrange your potato wheels into diagonal stacks in the pan. Place one wheel flat in the pan, and then stack the others on it, at a 45 degree angle to the bottom of the pan (so a portion of each wheel touches the pan). Keep going until you reach the other end of the pan, and then start a new row. Your pan should have room for three long rows.

5. Drizzle 2 tablespoons of olive oil on top of the potatoes.

6. Add your tomatoes, working them into the crevices between the potatoes (instead of just layering them on top).

7. Sprinkle with some garlic and/or onion powder to taste. Garnish with some shredded vegan cheddar cheese, such as Follow Your Heart’s Vegan Gourmet.

8. Bake, covered, at 425 degrees for 45 to 60 minutes, or until the potatoes are baked to your satisfaction. They should be soft and tender (crispy, not so much), like the inside of a baked potato.

Note: Some of the cheese – namely, the stuff around the perimeter, touching the sides of the glass pan – burned on me. The Vegan Gourmet brand cheese might melt a little more quickly than I’m accustomed to. If you like your potatoes a on the soft side (mememe!), and plan on baking this dish longer, you may want to add the cheese 15 or 20 minutes in. This could help minimize the burning.
