Tahini Tofu Salad (for dogs & their people)

Another dog food recipe, again suitable both for dog-kids and their human parents. My husband loves this dish (even with the watered-down tahini dressing) – and I love how the dishwasher smells when filled with tahini-soaked dishes. Win!

Tahini Tofu Salad (for dogs & their people)

For the salad:

1 16 ounce bag of dried navy beans OR 6 cups cooked navy beans OR 3 pounds cooked navy beans OR 4 16 ounce cans of navy beans
4 bricks of tofu
2 cups mixed vegetables (I used frozen carrots, corn, green beans and peas)
2 cups broccoli
2 cups unsalted peanuts
1 cup raw sunflower seeds

For the tahini dressing:

1 cup tahini
1 cup apple cider vinegar
2 tablespoons lemon juice
6 cloves garlic
4 tablespoons dried parsley
1 tablespoon sugar
1 cup oil
2 cups water

1. Sort, rinse and soak the dry navy beans overnight. When you’re ready to assemble the dish, drain and rinse the beans and set aside. If you’re using canned beans, simply rinse the beans once you’re ready to assemble the dish.

2. Several hours prior to assembling the dish, press the bricks of tofu, squeezing all the excess water out (directions here).

Note: This is optional, but will help the tofu to absorb as much tahini goddess goodness as possible!

3. After your beans are soaked, drained, rinsed and ready to go, and your tofu is pressed, it’s time to make the dressing! Combine the tahini, apple cider vinegar, lemon juice, garlic, parsley, sugar, oil, and 1/2 of the water in a blender or food processor and process until smooth. If the dressing is too thick for your (or your dog’s) taste, add a bit of water and process until the dressing is the desired consistency. Added water will help lower the fat content of the dressing, while still providing enough liquid to add that extra kick the tofu and veggies.

Note: I modified the Tahini “Goddess” Dressing recipe at About.com. For this dish, I doubled the recipe (I try to make the dogs’ food with as much extra “gravy” as possible, since I mix the homemade food with store-bought dry kibble) and omitted the salt and soy sauce (Kaylee is on a low-sodium diet). You may want to change the serving size to fit your own needs.

4. Cube the tofu into small, bite-sized squares.

5. Place the cubed tofu in a large (19-cup) Tupperware container. Add the tahini dressing and mix well. If you have enough time, allow the tofu an hour or two to marinate in the tahini dressing.

6. Add the navy beans, mixed vegetables, broccoli, peanuts and sunflower seeds and mix gently – but thoroughly – taking care not to mush the tofu.

Optional: You can add the veggies raw, or steam them first.

7. Serve cold or at room temp.
