Chocolate Almond Banana Bread

Chocolate Almond Banana Bread


1/2 cup brown sugar
1/2 cup white sugar
1/2 cup margarine, at room temp
3 very ripe bananas, mashed well
2 cups flour
3/4 cup cocoa powder
1/2 teaspoon baking soda
1/4 cup vanilla soy milk, mixed with 1 teaspoon apple cider vinegar + extra soy milk to taste
1 teaspoon vanilla extract
1 teaspoon almond extract
1/2 teaspoon salt
1/2 cup chocolate chips


1. Preheat the oven to 350 F. Spray an 8×4 bread pan with non stick cooking spray, or lightly coat with margarine.

2. Sift together flour, baking soda, cocoa powder and salt.

3. Cream together the margarine and sugars. Add the bananas (mashing to a creamy mess), soy milk/apple cider mix and vanilla and almond extracts.

4. Add the wet ingredients to the dry. Mix well. If the dough is too dry, stir a little extra soy milk in, until it has the consistency of thick pudding.

5. If desired, toss in some chocolate chips for extra chocolaty gooey goodness.

6. Pour batter into pan. Bake for 60 to 70 minutes. Enjoy warm!

    Oh my goodness. They all look good, but I think the chocolate almond banana bread is speaking to me the loudest right now. Yum! I just made chocolate chip pumpkin muffins a little while ago & frosted them with the buttercream frosting from Vegan Cupcakes Take Over The World. :)
