Lemon Pepper Zucchini Salsa

Inspired by this recipe at health.com, I decided to do make a salsa style dip using zucchini as the base, versus the regular tomatoes halloonline downloaden. (I planted plenty of tomatoes in my garden – it’s at least 60% tomatoes, actually – but they haven’t started popping yet! The zucchini, on the other hand…) In place of cilantro, I used lemon pepper, ’cause that’s what I had in the cupboards sky go herunterladen chip. My first time cooking with it, too!

The result? A super-tasty, super-healthy dish that you can use hot or cold, as a dip for tortilla chips, or perhaps a topping on pasta herunterladen. I did a little bit o’ both, as you can see!

Lemon Pepper Zucchini Salsa

Ingredients

1 tablespoon olive oil
4 cups zucchini, cubed
2 cups corn, frozen
2 cups tomatoes, diced
2-3 teaspoons lemon pepper

Directions

In a large skillet, heat the olive oil on medium heat herunterladen. Add the cubed zucchini and corn and cook, covered, on medium for about five minutes. Add the tomatoes and lemon pepper and continue to cook until the veggies are tender moodle dateien nicht herunterladen.
