Chris is a food genius.

Did you know that the food you eat becomes energy? IT’S TRUE! Tasty, tasty energy. And at the rate I’m packing it in, I should have scaled Everest several pizzas ago.

Another fun fact: this is one of my favorite Parks & Rec clips. I mean Andy, right. He is so cute, y’all! I’d just never want to date him, because I’ve seen how he lives, and it is not pretty.

So anyway, I just knew that this clip had to have a meal all to itself this Carbs & Rec. But what to choose?!? Spaghetti, cookies, and nachos are all equally yum. (Okay, so maybe I’m partial to cookies, being part Cookie Monster and all. I promise not to play favorites!)

In the end I went with nachos, because they’ve got the coolest Dwyer moves.

As I went hunting through my ginormous stack of cookbooks, I was surprised to see a ton of nacho recipes not involving tortilla chips. Like, I thought tortillas were the defining characteristic of nachos! But no! Quite a few of them use different potato bases: tater tots, waffle fries, you name it.

I discovered so many drool-worthy recipes that it was hard to choose just one – the Totchos from Bake and Destroy, Mucho Macho Nachos from Home-Cooked Vegan Comfort Food, Skillet Nachos from Betty Goes Vegan – but in the end it was the Irish Nachos (also via Home-Cooked Vegan Comfort Food) that called my name the loudest. Complete with karate kicks and set to the tune of Eye of the Tiger, natch.


Don’t worry, Andy. There is (vegan) butter in the cheesy sauce. I got your back, bro.

According to Celine and Joni (can I call you ladies that?), this dish is traditionally made with waffle fries – but they replaced the fries with tots for a more family-friendly recipe. I was able to find frozen waffle fries in the store, so I went old school: waffle fries layered with a smoky cheese sauce, followed by Tofutti sour cream, chives, tomatoes, bacon bits, and – because I didn’t have (read: don’t like) jalapenos – a light dusting a fried Tofurky Italian sausage crumbles. Just spicy enough for me!

Can I let you on in a little secret? Energetic was the last thing I felt after splitting a plate of these with Shane. Ready for a nice, long coma is more like it. Chris Traeger, you are liar sir! I said good day!

    I’ve had those nachos (but with tater tots) and, while delicious, they certainly do put you into a state of food coma!

    I’m totally tempted by this, but i’m trying to behave for MoFo, dammit! Maybe i’ll have an all-salad day or something so that I can justify having this, because it looks SO SO TASTY.
