Carbs & Rec: Chris Traeger’s Tofurky Burger Challenge

The tenth episode of season three (“Soulmates”) is one memorable episode in an entire season filled with memorable Parks & Rec episodes. And I’m not referring to Tom’s epic prank on Leslie, from which the show gets its title.

(Remember, he signed up for the same dating service as Leslie and convinced her that their software put them at a 98% match?

Priceless.)

Nope, I’m thinking of Chris Traeger’s Turkey Burger Challenge. Faced with alarming health statistics, Chris vows to put healthier fare on the menus in government buildings – including the one that houses the Parks Department. Ron’s not having any of that, so he challenges Chris to a burger cook-off: Chris’s super-fancy turkey burger against Ron’s all-American, all-male hamburger, hold the exotic trimmings. To the winner goes the menu.

Cue: a quick supply run to each of the respective contestants’ favorite stores. For Chris, this is the health food store (a few towns over, I believe);

while Ron gets both his food and his stuff and Food N’ Stuff, Pawnee’s discount store.

Good deal.

Chris’s turkey burger predictably cost him the contest; but I think we can do him one better with an all-vegan burger. Better tasting (I remember turkey burgers from back in my omni days, and they were THE WORST), and better for you!

To help me live up to the challenge, I turned to (what else!?!) Joni Marie Newman and The Best Veggie Burgers on the Planet. I could have went with any one of a million mouth-watering recipes (Inside-Out Cheeseburger Seitanic Stuffer, you will be mine!), but in the end I opted for authenticity, in the form of the Mushroom Chicken Burger. Not a turkey, but still in the (mock) bird family.

This baby’s got chicken-flavored TVP, tempeh, mushrooms, and nutritional yeast. I also added some peppers, onions, and walnuts for extra color and crunch.

Topped with Vegenaise, mustard, lettuce, spinach, tomatoes and onions, and served with a side of baked zucchini sticks. (That’s a link to the recipe, yo!) Hella healthier than french fries, but still damn tasty.

And in conclusion, I leave you with this video of a very sick Chris Traeger commanding his body to STOP…POOPING! on a one-minute loop. Maybe not entirely suitable for a food festival, but it’s my all-time favorite Traeger moment, so there you go.

    Oh god, Ron in the heath food store!! Great to see this episode represented and I’m impressed you veered away from those seitanic stuffers, every time I open that book I just end up making that recipe. It’s ridiculously good!
