So this past VeganMoFo I bookmarked a ton of recipes to try – but unlike years gone by, I actually did it wie viel kann man auf netflix downloaden! And in a timely manner! Yay me!

Necessity was the deciding factor here, as I had a ton of butternut squash from my garden that needed to be eaten stat tomtom mydriveen. When I saw House Vegan’s Baked Butternut Squash Mac and Cheese, I knew it was meant to be pinterest gratis downloaden. Her recipe was in turn inspired by the Butternut Squash Mac ‘n Cheeze at Oh She Glows; after comparing and contrasting the two, I ended up doing a sort of mashup, with roasted (vs firebird 2.5. steamed) squash like in the original (fewer dishes, yo!), but baked with a panko topping similar to House Vegan’s version.

But not the pasta! I only increased that by a cup, for extra-awesome creamy cheesiness. I think it turned out to be a pretty killer pasta-to-cheese ratio in the end win 1809 herunterladen. But you can go with a full four cups of pasta if you’d rather! Be your own decider person.

While it’s not as amazing as the processed, junky stuff, the butternut squash cheese sauce is still hella tasty, and makes for a rather satisfying macaroni and cheese herunterladen. And the parmesan topping? Out of this world. Just be sure you supervise it during the broiling phase, lest you come dangerously close to charring it like I did evernote app. Learn from my mistakes!


Mac & Cheese & Butternut Squash

(Based on recipes by Oh She Glows and House Vegan.)

1/4 cup nutritional yeast
1/2 cup walnuts
A dash of salt

1/4 cup panko bread crumbs

2 pounds butternut squash (err on the side of extra)
1 tablespoon olive oil

2 tablespoons margarine
1 1/2 cups plain soy milk
2 tablespoons arrowroot powder
1 cup nutritional yeast
1 tablespoon Dijon mustard
1 1/2 teaspoons garlic powder
1 teaspoon onion powder
2 tablespoons lemon juice
2 teaspoons salt (or to taste)
black pepper to taste

3 cups elbow or mini shell macaroni


1 wie kann ich von facebook videos herunterladen. Begin by making the parmesan. In a food processor, combine the nutritional yeast, walnuts, and salt; pulse until a crumbly meal forms. Transfer to an airtight container herunterladen.

2. Top make the topping, mix 1/4 cup of the parmesan with 1/4 cup of panko; stir well and set aside.

3. Preheat the oven to 425F. Cut off the ends of the butternut squash, peel, and remove the seeds. Cut into 1″ cubes. In a 9×12″ glass baking pan, toss the squash with one tablespoon olive oil. Roast at 425F for about 40 minutes, or until tender, stirring several times throughout. When done, remove and set aside.

4. Next, make the cheesy sauce. In a medium-sized saucepan, heat the margarine on medium until melted. Add the soy milk and arrowroot and whisk well. And the rest of the ingredients (nutritional yeast, lemon juice, and spices); mix well and continue to cook on medium heat for about five minutes, or until the sauce thickens. Reduce the heat to low and continue to whisk occasionally.

5. Cook the pasta according to the directions on the box. Drain and set aside,

6. In a food processor, combine the cheesy sauce and butternut squash; pulse until smoothly blended.

7. In the 9×12″ pan, combine the pasta and sauce; mix well. Top with the parmesan/bread crumb mix. Bake at 400F for about ten minutes, or until the cheese becomes bubbly. Broil for another few minutes, until the topping turns a golden brown. Remove and enjoy!

    That looks and sounds so good! I’ve been going through a mac and cheese phase for the past 6 months, and I don’t want it to ever end.

    I love butternut in cheesy sauces, it makes it super yummy. This looks great. Mac and cheese is its own food group.
