Support Needed to Prevent Repeal of Foie Gras Ban in Chicago!

A ban on the sale of foie gras (French for “fatty liver”) recently went into effect in the city of Chicago, and in response, a group of chefs has initiated a campaign to repeal it. Opponents of the humane ordinance assert that serving the cruelly produced appetizer should be their “choice.” Two Chicago Aldermen have introduced an ordinance seeking to repeal Chicago’s foie gras sale ban, denigrating the council’s compassionate stance and calling it “silly.”

It is critical that they hear from us. Chicago’s foie gras sale ban is humane and upholds societal values. It restricts cruel and unacceptable behavior. We cannot allow the abuse of children or animals to be a “choice.” Foie gras is a product of extreme cruelty, and selling it should not be a “choice.”

Please contact Aldermans Bernard L. Stone and Burton F. Natarus and tell them that compassion is not “silly,” and cruelty should not be a “choice.” Urge them to withdraw their unprincipled proposal.

The September 4 edition of Time Magazine has a brief piece, by Nina Vizcarrondo, headed, “Banned: Fine Food and Fun.” (Notebook, pg 16)

It opens:

“When Chicago’s ban on the sale of foie gras came into force last week, liver lovers revolted. One pizzeria began serving pies topped with the fatty delicacy to protest a law that even Mayor Richard Daley called silly. Chicago isn’t the only place with rules drafted by the Ministry of Loopy Laws. Here are four others.”

Then the piece mentions laws that ban impersonating a minister of religion, pulling things behind bicycles, mismatched suits (in Carmel) and playing games in the street.

The article cries out for letters questioning foie gras as “fine food” and objecting to its ban being lumped in with silly laws. Please send a letter to the editor. Time Magazine takes letters at letters [at] time.com

Always include your full name, address, and daytime phone number when sending a letter to the editor. Shorter letters are more likely to be published.

The Wednesday, August 23, Chicago Tribune front page story is headed, “Chicago’s wild foie gras chase; Mayor Daley calls the ban the ‘silliest’ law. Restaurants across town serve up the delicacy in defiance. Now the question is whether city officials will actually try to enforce the new law.”

It opens:

“Foie gras appeared on pizza on Archer Avenue Tuesday, complemented cornbread and catfish at a South Side soul food place, and was stacked on sausages like pats of butter at a gourmet hot dog joint on the North Side.

“Chicago’s immediate reaction to a city ordinance banning foie gras–the French dish made from the livers of force-fed ducks and geese–was to embrace the gray goo like never before, in flights of culinary imagination.

“Rhetoric and pate abounded on the first day of the City Council’s ban, as restaurateurs and gourmands openly flouted the prohibition–cultured, giddy, goose-liver-fueled acts of defiance.”

“On Tuesday morning the Illinois Restaurant Association filed a lawsuit in Cook County Circuit Court seeking to overturn the ban, accusing the City Council of overstepping its authority.

Animal advocates fighting foie gras are going after the world’s second largest producer, New York State. That story is covered in the Thursday, June 22 New York Times and also briefly in the Los Angeles Times.

The brief Los Angeles Times piece (Pg A12) is headed, “Suit Says Foie Gras Renders Birds Diseased” and summarizes the story as follows:

“Animal rights groups are seeking to ban foie gras production in New York, one of the leading U.S. producing states, arguing that overfeeding birds to fatten their livers makes the animals sick. The Humane Society of the United States and other animal rights groups filed a formal action with the New York State Department of Agriculture and Markets to stop the practice under a state law that makes it illegal to produce food from diseased animals.”

The Friday, June 2, edition of USA Today has a large article, page 3A, headed, ” Foes see foie gras as a fat target; Animal welfare groups allege cruelty to birds.”

It opens:

“If you have the taste and the wallet for foie gras the way they serve it at Philadelphia’s swank Le Bec-Fin, you’d better run over there and order it now. The city may soon join Chicago and California in banning the duck liver delicacy.

“That would mean no foie gras gelled with peach compote at Le Bec-Fin, nor foie gras torchon with ‘seckel pear tatin, vanilla creme fraiche and warm brioche’ at The Striped Bass, nor foie gras and fig empanadas at Alma de Cuba.

“It would also stop cruelty to ducks, according to animal welfare groups. To make foie gras — French for ‘fat liver’ — farm-raised moulard ducks are force-fed corn through a funnel put down their necks until their livers expand to at least six times normal size.”
