Vegan Pumpkin Spice Ice Cream!

I know, I know. Ice cream!? On a snowy January morning!? In the middle of a bitter, polar-like, transnational cold snap!? Am I kidding!? A sadist!? Ms. Freeze, maybe!? What gives!?

Nah, I’m just a vegan – a vegan with a little extra, week-past-the-expiration-date Silk Pumpkin Spice stashed in the fridge. And since this liquid yum is only available a few months out of the year, there’s no way I’m letting it to go waste.

Enter: ice cream! Make a batch or two now, and freeze it ’til spring. Or eat in it front of a nice, cozy fire. Wev.

Bonus: you can now enjoy Silk’s holiday flavors year-round. Just in a different state, yes?

Silk Pumpkin Spice Ice Cream

Inspired by my earlier Vegan Soy Nog Ice Cream! recipe.


2 tablespoons arrowroot powder
4 cups Silk Pumpkin Spice soy milk, i.e., one full quart container (divided into 1/4 cup and 3 3/4 cup servings)
1/2 teaspoon pumpkin spice spices
2 tablespoon brown sugar

The Perfect Cup of Tea

Mix 1/2 cup of Silk’s seasonal Pumpkin Spice soy milk with 1/2 cup water. Microwave until hot-hot-hot – about two and a half minutes – and then throw in one or two bags of your favorite tea. Let steep for five minutes, add a bit of sugar to taste, and enjoy!

I’m sipping on a cup now (Bigelow’s Earl Grey Green Tea; I prefer their Green Tea with Peach, but I’m plum out), trying my very bestest to find my calm zen place, after hearing rumors on the internets that Obama plans to both adopt and buy a dog, in an incredibly stupid attempt to play even the most trivial of issues* both ways. And no, the run-on sentences definitely aren’t originating from my zen place.

For what it’s worth, I’m so glad I voted my conscience this election cycle. Otherwise, I probably would have thrown my mug through the front window by now.

* Relatively speaking, and totally removed from the decision’s context and long-term consequences.



VeganMoFo, Day 26: Silk Sightings!

Winter’s coming, winter’s coming. There’s a chill in the air, a snap in the wind, a bite in the morning dew-turned-frost. Can’t you feel it? Winter’s coming!

For all of Mother Nature’s blustering, though, the surest sign that FSMas is round the corner comes not from the cold weather, but from the grocer’s cold storage section:

Silk Nog! And Pumpkin Spice! Happy holidays, my long lost friends! My, how I’ve missed you.

Shane and I did some Halloween shopping on Saturday, and on a whim, I peeked in the big box store’s “dairy” section. (We were just round the corner, picking up some booze and chips. *shrug*) Lo and behold, one lone row of Silk Soy Nog! Even though yesterday was a wonderfully warm fall day, I knew then that winter wouldn’t be far behind.

Tonight we’re supposed to get our first frost.

Tomorrow I’m sending Shane to Wild Oats to pick up some Pumpkin Spice.

Maybe later this week I’ll make some Spicy Three Bean Soup.

Yup, it’s that time of the year.

So, tell me veg*ns: you’re stuck on an Arctic island, and you can only have one case of Silk. Which do you choose: Soy Nog or Pumpkin Spice?
